Chinese Style Refreshments--Fried Butter& Clam Meat-Filled Tarts

Ingredients: fine flour, 300g expanded clam meat, butter, sugar, carrots, potato powder, beef tallow, lard

Recipe:

  1. Marinate the clam meat in sugar for half an hour. Take out and drain off. Mix it with butter well to make a filling.
  2. Mix some fine flour with beef tallow, lard, potato powder and carrots juice well. Spread it in a flat-bottomed basin and freeze in a refrigerator for 1 hour to be a sheet.   3. Take the two sheets out and overlap them 3 times. Cut diagonally and roll it into a smooth and elastic sheet with a rolling pole. Add the filling in. Fry in the oil of 180o till brightly red. Remove and serve.
