Chinese Style Refreshments--Baked Abalone Yuanbao

Ingredients: abalone meat, chicken meat, flour, beef tallow, lard, egg, sugar, salt, gourmet powder, chicken powder, abalone juice

Recipe:

  1. Knife the abalone into two parts. Cut the chicken meat into pieces. Saut¨¦ the pieces till done. Add the abalone juice, salt, gourmet powder and chicken powder to make a paste. It will be used as a filling.
  2. Mix the flour, beef tallow and lard well to make a sheet. Spread it in a flat-bottomed basin and freeze in a refrigerator for 3 hours. Add little water to flour, egg, sugar and lard to mix them well to make a sheet. Freeze it in a refrigerator for 3 hours. Overlap the two sheets for 3 times to make a shortening sheet.
  3. Knife the shortening sheet into small pieces and put them in a mould. Add the filling in and cover with a thicker shortening piece. Shape it like an abalone. Bake in an oven of 200o for 15 minutes. Remove and serve.
